Approximately 30 minutes by Limited Express Uwakai 25 (bound for Uwajima) from JR Matsuyama Station. The scenery visible from the express train window gradually changes, and you will approach a charming town with a nostalgic atmosphere. We will meet around the area after descending the stairs upon exiting the ticket gate. There is also the tourist information center “Tabisato-an” right next to the exit, so feel free to stop by if you arrive early.

Vinegar crafted naturally, as opposed to industrially, varies not only in its ingredients, composition, and aging/fermentation periods but also in taste due to changes in the year’s climate and the regional climate and culture. In this tasting session, we will convey the charm of vinegar by carefully selecting four varieties from over 100 breweries nationwide and including Moribun Brewery, founded in Uchiko, allowing you to appreciate the unique flavors.

Utilizing the distinctive features of the tasted vinegars, we will craft a Japanese menu that brings out the charm of vinegar in each dish. Through hands-on cooking, you will experience how the aroma and taste of vinegar, as discovered during the tasting, transform during the cooking process. This practical session will also showcase the depth of Japanese cuisine, focusing on fundamental cooking techniques that enhance the natural flavors of ingredients and the art of seasoning.
12:45 Designated Important Cultural Property “Uchiko-za”: Immerse Yourself in the World of Taisho-era Theater
We will guide you inside the designated Important Cultural Property, “Uchiko-za,” located in the Hachigatsu-Ichi and Gokoku districts, which have been selected as a National Important Preservation District for Groups of Traditional Buildings. Built in the architectural style of Taisho-era theaters, this structure is still actively used as a stage for traditional performing arts and literature. You will have the opportunity to explore the stage, hanamichi (flower path), and even the underground area, gaining insights into the unique features of a Taisho-era theater.
14:00 Established in 1893, the Moribun Brewing Museum and the creation of fermented health vinegar, “Su Tamago.”
While viewing valuable materials that have been preserved since its founding in 1893, visitors can immerse themselves in the historical context and the art of brewing vinegar at that time. Subsequently, there is a workshop on making “Su Tamago,” a popular product representing Moribun Brewing domestically and internationally. This workshop focuses on fermented foods that promote health, predating the health boom, providing an enjoyable learning experience where participants can feel and understand the mechanism of fermentation.
15:00 Explore Uchiko Town from the Roadside Station “Fresh Park Karari” and Stroll Through Uchiko Town
Discover the heart of Uchiko Town, designated as a national model “Michi no Eki” (Roadside Station) by the Ministry of Land, Infrastructure, Transport and Tourism. This station serves as the culinary hub of Uchiko, featuring a marketplace with local agricultural products and processed goods. Afterward, take a leisurely stroll through the streets of Uchiko Town, where the scenery harks back to the Edo period. Enjoy the preserved cultural heritage, including Important Cultural Properties constructed during that era, as well as traditional crafts like washi paper and wood wax that supported the livelihoods of the people in Uchiko Town.

Once you have thoroughly enjoyed the “Rice and Vinegar Tour,” we will disband on the spot. Afterward, you are free to explore the town on your own or take it easy at the hotel. Feel free to savor the charm of Uchiko Town at your own pace until time allows.
